I lived in NYC for five years with my husband and Westie, Mack Brown before recently moving all the way across the country to Los Angeles. Jalapeno-Lime Chicken Burgers


I've never made chicken burgers before, and usually when I make something new for the first time, I follow an established recipe.  But I didn't do that for these burgers.  I had a flavor profile already in mind and the right ingredients in my fridge to make it happen, so I just went for it.  The result: these spicy and succulent jalapeno-lime chicken burgers.

We're still trying to stay away from carbs for the rest of the month, so we had the burgers without buns, but, by all means, it eat them with a bun.  And toast it.  Yum.   Don't worry.  I'll only be a little jealous.

Jalapeno-Lime Chicken Burgers

1 lb. ground white meat chicken
1 tsp. chili powder
1/2 tsp. cumin
1/4 tsp. cayenne pepper
1 whole jalapeno, seeded and diced finely
1/2 small onion, diced finely
the juice of 1 lime

In a medium-sized bowl, add the first five ingredients to the ground chicken.  Mix gently.  I like to use my hands so I don't over mix it.


Squeeze the juice of one lime into the mixture and mix gently a few more times.  Separate the chicken into 4 equal parts and form into patties.

Cook on the grill.  7-8 minutes per side.

Serve with avocado and tomatoes.

Serves 4.
