I grew up in the Blue Ridge Mountains of Virginia where I also attended college and met the love of my life. I lived in NYC for five years with my husband and Westie, Mack Brown before recently moving all the way across the country to Los Angeles. I'm an amateur chef, total foodie, lover of Westies, sports fanatic and self-proclaimed book worm. You'll find a little bit of all these things I love on this blog. And...most importantly, I'm a new mom to the most precious baby boy, Austn Robert, born this past October.

Road Trip: Day Seven

On our way to Santa Fe from Austin, we stopped over for the night in Lubbock, Texas, the home of Texas Tech University.  Trust me when I tell you there's not a lot going on in  this sleepy Texas town.

The drive to Lubbock from Austin, while flat and redundant, did provide some cool moments.  Once we started getting further northwest of Austin, we came upon miles and miles of wind farms in the high plains of Texas.  They were very cool to drive through, and we (B) actually managed some good photos of the wind mills while driving.




As we got closer to Lubbock, we started seeing tons of oil rigs literally in the middle of nowhere.  Very Texas.


For dinner, we went to a local Tex-Mex bar and had more queso (I couldn't leave Texas without having it for another night!) and tacos.



On the way back from the restaurant, we drove through some of the Texas Tech campus, and I was impressed.  It's actually a really beautiful school.  (Sorry no pictures.  It was too dark.)  Then, we headed back to the hotel so we could go to bed and get up early the next morning to head to Santa Fe.
